I have partnered with The Crazy Nuts Mom to bring you this wonderful review and giveaway of The Busy Mom’s Cookbook by Antonia Lofaso and I happily agreed because I’m a mom and I’m incredibly busy.

> I selected 3 recipes to take this cookbook for a test drive (because I’m addicted to having cookbooks). I made Roasted Chicken 101, Chicken and Dumplings and Strawberry Shortcake with Whipped Cream. I had a chicken I had gotten on a sale over a year ago and needed to get out of my freezer. I had only ever cooked a whole chicken in the crockpot before. I thawed the bird and followed the instructions. They were so simple to follow and the tips she provides. For the Roasted Chicken 101, I had to rub it down with olive oil ‘like it’s had a hard day’. I love it! And then she went on to explain WHY ‘The beauty of a roasted chicken is the crispy brown skin, and the oil will help you accomplish this’. I can tell you the chicken was the awesome and very simple to make. My 5 year old little boy told me I make the best food ever. He’s never gave me a compliment before! I took the left over chicken and made the chicken and dumplings. They were absolutely devine. I had no idea it could taste so good. Because we (me) don’t like peas, we used green beans to make this and I’m sure whatever veggies you have would work just as well. My dumplings didn’t turn out the way they should have, but I think it was my fault as I was doing 3 other things at once and I think using a tiny cookie scoop, like from Pampered Chef, would have helped make the dumplings more consistent. The Strawberry Shortcake and Whipped Cream. I have never made whipped cream before. I don’t like to get my mixer out often, but he directions said if I whisked it by hand, it would take 10 minutes. I thought yeah, but not with these arms. After a minute, I ran and got the mixer out and did it her way. Super fast and simple. The hint of nutmeg and cinnamon in the biscuits were delightful. Truth be told, no one but me got to eat them. I ate them all myself, including the whipped cream. I will need to make a double batch if my family wants any next time. Aren’t you just dying to trying these recipes too? Well, I can do one better!
